ONRI Ferments

In our small manufactory in Aegerten near Biel, we combine traditional production methods from Japan with local organic raw materials and make from them koji, miso and more.
The basis of our products are legumes and grains from sustainable agriculture, with much care and manual work fermented and refined by us. It can take up to several years before our ferments have reached their peak in flavor and are then, as living foods full of umami, ready to enrich your dishes. We work closely with our suppliers and focus on the development of products that not only convince in taste, but also make a valuable contribution to a conscious and balanced diet.

The Spielhofer Cheese Dairy is known for producing traditional cheese of the highest quality. All products are made from silage-free raw mountain milk sourced exclusively from regional farms. Anne-Claire Schott has been running her family’s winery on Lake Biel since 2016. She cultivates the existing vineyards on the steep slopes using biodynamic methods and highlights traditional viticultural practices through wines that reflect the terroir. Anne-Claire bridges the gap between viticulture, the humanities, and art. This is evident in her personal expression of wine through the series “Aroma of the Landscape.” She allows her instincts to guide her as she freely creates her wines. Her wines have been Demeter-certified since 2021.
